Erica’s Notes
Beets are either falling-off-a-log easy or confoundingly difficult. If they are easy for you, keep doing whatever you are doing. If they are a challenge, check your soil texture. Beets grow best when they grow fast in a fairly loose soil which allows the roots to expand easily.
For uniform and well-sized beets, thinning is essential. Because each seed is really a seed cluster, one “seed” will often germinate several beet seedlings. When seedlings reach about 3-inches tall, thin to one beet every 3-inches. If you want full-sized beets, thin again when the seedlings grow enough that the foliage starts to crowd by pulling every-other baby beet. This should leave a generous final spacing of about one beet every 6-inches.
Roots and greens from thinned seedlings and baby beets can be eaten.
